Ingredients

Main
  • 4 fillets of flounder
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs beaten
  • 1 cup breadcrumbs preferably panko
  • Vegetable oil for frying

Equipment

  • Large skillet or frying pan
  • Plate lined with paper towels
  • Shallow dish for dredging
  • Tongs or a slotted spoon
  • Cooking thermometer (optional)

Method

  1. Rinse the flounder fillets under cold water and pat them dry with paper towels.
  2. In one shallow dish, combine the flour, garlic powder, paprika, salt, and black pepper.
  3. In another shallow dish, beat the eggs until well combined.
  4. Place the breadcrumbs in a third shallow dish.
  5. Coat each fillet in the flour mixture, then dip it into the beaten eggs, and finally roll it in the breadcrumbs.
  6. In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch and heat over medium-high heat.
  7. Carefully place the coated fillets in the hot oil, frying for 3 to 4 minutes on each side until golden brown.
  8. Transfer the fried flounder to a plate lined with paper towels to absorb excess oil.
  9. Serve immediately for the best texture and flavor.

Notes

For extra crunch, double-dip the fish by repeating the egg and breadcrumb steps.
