Ingredients

Main
  • 1 cup warm water about 110°F
  • 1 tablespoon honey or maple syrup
  • 2 teaspoons active dry yeast
  • 1 cup sprouted whole wheat flour
  • 1 cup spelt flour
  • 1 teaspoon salt
  • 1/4 cup sunflower seeds optional
  • 1/4 cup flaxseeds optional

Equipment

  • Large mixing bowl
  • Measuring cups and spoons
  • Loaf pan (9x5 inches)
  • Kitchen towel
  • Oven

Method

  1. In a mixing bowl, combine warm water and honey. Stir in the yeast and let it sit for about 10 minutes until frothy.
  2. In a separate bowl, whisk together the sprouted whole wheat flour, spelt flour, and salt.
  3. Gradually add the dry mixture to the yeast mixture, stirring until a dough forms.
  4. Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm area for 1-2 hours, or until doubled in size.
  6. After rising, punch down the dough to release the air. Shape it into a loaf and place it in a greased loaf pan.
  7. Cover the loaf with the kitchen towel and let it rise again for about 30-45 minutes.
  8. Preheat your oven to 350°F (175°C). Bake the bread for 35-40 minutes until golden brown.

Notes

Serve fresh out of the oven or toasted. Can be frozen for later enjoyment.
