Tempering

  • 2 tbsp chopped coriander leaves
  • 2 tbsp grated coconut optional

Equipment

  • Mixing bowl
  • Steamer or a large pot with a lid
  • Whisk or spatula
  • Greased plate or dhokla tray
  • Measuring cups and spoons

Method

  1. In a mixing bowl, combine gram flour, yogurt, water, ginger paste, green chili paste, lemon juice, sugar, turmeric powder, and salt. Whisk until smooth.
  2. Just before you are ready to steam, mix in the baking soda.
  3. Grease your steaming plate or dhokla tray with oil.
  4. Pour the prepared batter into the greased plate and spread it evenly.
  5. Fill your steamer with water and bring it to a boil.
  6. Place the plate in the steamer and cover it. Steam for about 20-25 minutes or until a toothpick inserted comes out clean.
  7. Once done, remove the plate from the steamer and let it cool for a few minutes. Cut into squares.
  8. In a small pan, heat oil and add mustard seeds. Once they splutter, add sesame seeds and pour the tempering over the cut dhokla.
