Ingredients

Main
  • 2 lbs chicken thighs boneless and skinless
  • 4 dried guajillo chilies stems removed
  • 2 dried ancho chilies stems removed
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 tsp cumin
  • 1 tsp oregano
  • 1 tsp black pepper
  • 4 cups chicken broth
  • 12 corn tortillas
  • 1 cup chopped fresh cilantro
  • 1 cup diced onion for topping
  • 1 lime cut into wedges

Equipment

  • Large pot or Dutch oven
  • Blender
  • Strainer
  • Tongs
  • Serving platter
  • Skillet for warming tortillas

Method

  1. Toast the dried guajillo and ancho chilies in a dry skillet over medium heat for about 2-3 minutes.
  2. Remove the chilies from the skillet and place them in a blender with chopped onion, minced garlic, cumin, oregano, black pepper, and 1 cup of chicken broth, then blend until smooth.
  3. In a large pot or Dutch oven, add the remaining chicken broth and the blended sauce. Bring to a simmer and add the chicken thighs. Cook for about 1.5 hours until the chicken is tender.
  4. Remove the cooked chicken from the pot and shred it using two forks.
  5. Use a strainer to separate the solids from the broth.
  6. Warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side.
  7. Fill each tortilla with a generous amount of shredded chicken and top with chopped onions and fresh cilantro.
  8. Serve the tacos with a small bowl of the strained broth for dipping.

Notes

Let the chicken marinate in the sauce for a few hours or overnight before cooking for the best flavor.
