Ingredients

Main
  • 10-12 medium-sized fresh peaches ripe but firm for best results
  • 2 cups granulated sugar for sweetness and preservation
  • 4 cups water to create the syrup
  • 1/4 cup lemon juice to prevent browning and add acidity

Equipment

  • Canning jars (quart or pint size)
  • Large pot or canner
  • Jar lifter
  • Funnel
  • Peeler
  • Cutting board
  • Measuring cups

Method

  1. Start by sterilizing your jars and lids.
  2. Rinse the peaches under cool water to remove any dirt or residue.
  3. Using a peeler, remove the skin from each peach.
  4. Cut each peach in half and remove the pit. Slice them into quarters or leave them halved.
  5. In a large pot, combine water and sugar, bringing it to a boil.
  6. Carefully pack the sliced peaches into the sterilized jars, leaving about half an inch of headspace.
  7. Pour in the lemon juice, then fill the jars with the hot syrup.
  8. Seal the jars with lids and process them in a boiling water bath for about 20 minutes.

Notes

These canned peaches are delightful on their own but can also complement various dishes beautifully.
