Ingredients

Main
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 bell pepper diced
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1 can 28 ounces crushed tomatoes
  • 1 can 15 ounces kidney beans, drained and rinsed
  • 1 can 15 ounces black beans, drained and rinsed
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • 1-2 jalapeños diced (optional, for heat)

Equipment

  • Large pot or Dutch oven
  • Wooden spoon for stirring
  • Measuring cups and spoons
  • Knife and cutting board
  • Can opener

Method

  1. In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon.
  3. Add the diced onion and bell pepper to the pot, cooking until they soften, about 5 minutes.
  4. Stir in the minced garlic, chili powder, cumin, and smoked paprika, cooking for another minute.
  5. Pour in the crushed tomatoes, stirring to combine with the meat and vegetables.
  6. Add the kidney beans and black beans, stirring gently.
  7. Pour in the beef broth and Worcestershire sauce, mixing well.
  8. Bring the chili to a gentle simmer, then reduce the heat and cover.
  9. Let it cook for about 30-45 minutes, stirring occasionally.

Notes

Letting the chili simmer longer allows the flavors to meld beautifully. Serve with cornbread or tortilla chips.
