Squid Luau

When it comes to Squid Luau looks are deceiving. This dish definitely makes a wrong first impression but the wonderful combination of taro leaves, coconut milk and squid/octopus is simply delicious. Most people love squid luau once they try it but for many the appearance is too hard to overcome. That however is a good thing because it means more for the rest of us. Squid luau is a must at any luau and goes great with white rice.

Ingredients
2 pounds calamari (squid) or 2 pounds octopus
3 pounds luau leaves (leaves of the taro plant)
1 teaspoon Hawaiian salt
1/2 teaspoon baking soda
6 tablespoons butter
2 medium onions, diced
3 cups coconut milk
1 1/2 teaspoon salt
1 tablespoon sugar

Directions
Clean calamari or octopus and slice in rings or bite size pieces.
Wash luau leaves, remove stems and thick veins. In a large pot, boil 3 cups of water with the Hawaiian salt and baking soda. Add the leaves to the boiling water and reduce heat. Simmer, partially covered for 1. One hour is sufficient because the stems and thick veins have been removed. If you were to use the entire taro leaf you would need to cook it for at least 3 hours to break down the oxalic acid. Drain, and squeeze out liquid. Saute onions and cleaned calamari and or octopus in the butter until the onions are clear. Add the coconut milk, cooked luau leaves, salt, and sugar. Simmer for 30 minutes.
