Mushrooms and Chicken
If you want to do a baked chicken dish where your chicken ends up being juicy and tender, you got to give this one a try. Anytime you add mushrooms, bread crumbs, and butter to chicken you know it is going to be good. This recipe is perfect for the big bags of chicken breast that you get from Costco or Sams. Also be sure to use Japanese Panko Bread crumbs.
Mushrooms and Chicken

4 Servings
½ c. bread crumbs (Panko is preferred)
1 tsp. salt
1/8 tsp. ground black pepper
2 ½ – 3 lb. chicken cut into pieces
1 lb fresh mushrooms/2 cans (6-8) oz sliced mushrooms
¼ c. butter or margerine
½ c. onion, minced
½ carrot, diced
1 can (10 ½ oz) chicken broth
¼ c. parsley, chopped
Combine bread crumbs, salt and black pepper. Place in a paper or plastic bag. Add chicken, 2-3 pieces at a time. Shake to coat. Place chicken in a 13 x 9 x 2 inch baking dish. Bake in a preheated moderate oven for 45 minutes. Rinse, pat dry and slice fresh mushrooms or drain canned mushrooms. In a large skillet, melt butter. Add mushrooms, onions, and carrot; saute for 5 minutes. In a large skillet, melt butter. Add chicken broth. Pour over chicken. Bake for 10 mins. Longer. Garnish w/parsley.
