Chinese Vegetable-Shrimp Soup

The recipe calls for ½ cup of shrimp but why stop there? Go for it and use one full cup instead and also throw in some Chinese Snow Peas and Abalone for kicks. Eat this soup with a good size bowl of rice and you got yourself a healthy low fat meal.

Hot Potato and Seafood Salad

There are tons of Hot Potato Salad recipes out there but this one we especially like because of the shrimp and crab meat. That is why we are calling this recipe Hot Potato and Seafood Salad and not just Hot Potato Salad. Besides crab and shrimp meat are not cheap and we should get credit for using expensive ingredients.

The recipe calls for a flat can of shrimp. A flat can is simply referring to your typical 6 oz. can and is what tuna is usually packed in. You can also subsitute imitation crab for real crab but trust us it won’t be as good.

Hot Crab Salad

Here is an easy recipe you can do after a long day at work. Just make sure you boil the potatoes and eggs beforehand. Since Easter just passed you can use your supply of boiled eggs the kids made. Hot Crab Salad is also good cold and as leftovers.

Baked Crab Salad

We love our imitation crab because it is cheap or easy to find. Real crab either fresh or from a can would be the number one choice but expect to pay a whole bunch more. The end result tastes pretty much the same so save your money and go with imitation crab. Imitation crab is made from cod fish and because of that fact alone, it should automatically be healthier for you than crab meat. We know the crabs would probably prefer you to use the imitation stuff.

Zucchini Seafood Casserole

Remy used zucchini to make his famous ratatouille, which is a stew of summer vegetables prepared in olive oil and cooked for an extended time over low heat. This dish also uses zucchni but is much easier and simpler.

Zucchini Seafood Casserole

4 cups zucchini, cut in ½-inch cubes
1 ½ cups Bisquick
1 ½ cups American Cheese, grated
1 cup round onions, chopped
1 lb. imitation crab ( or 1 cup tuna)
½ cup vegetable oil
3 eggs
1 tsp oregano
1 tsp salt
½ tsp pepper

Combine all the ingredient; mix well. Spread in greased 9-inch X 13-inch baking pan. Bake in 400 degree oven for 25 to 30 minutes until top is nicely browned.

Crab Mandoo

Imitation crab has nothing do with crab because it is actually made from Alaskan Pollack (also called Walleye Pollack, Snow Cod, or Whiting). In Asia, New Zealand Hoki, Gold Threadfin Bream and White Croaker are used to make imitation crab. Essentially imitation crab is fishcake made to to taste and feel like crab.
