Easy Pumpkin Pie

The pumpkin shortage you read about in the news is not going to affect us this year but may be a problem next year. Nestle which owns Libby products was unable to pick pumpkins due to heavy rains. Pumpkins rot when they sit in the mud for prolonged periods of time and because of this, Libby has decided to stop canning any more pumpkins this year.

Cranberry Bread Pudding

Cranberries belong to a group of evergreen dwarf shrub native to bogs. Bogs are wetlands typically found in cold areas of the northern hemisphere. The water originating from bogs are acidic and have a charateristic brown color from dissoved peat tannins and decaying vegetable matter.
All of this sounds pretty gross but the Native Americans who lived off the land were not going to let a little acidic bog water stop them. Today cranberries are commercially grown in sandy beds constructed in upland areas, which have shallow water tables. Contrary to popular belief, cranberry beds are only flooded during harvest and the winter months to prevent frost damage. So the what you see on TV in the Oceans Spray commercials are not everyday occurances in the life of a cranberry.

Orange-Glazed Sweet-Potatoes or Yams

Orange-Glazed Sweet-Potatoes
4 Servings
1 pound sweet potatoes
3/4 cup orange juice
1/2 cup firmly packed brown sugar
1/4 tablespoon wheat germ
1 tablespoon margarine
2 tablespoons grated orange peel
1 teaspoon cinnamon
1/4 teaspoon fresh grated nutmeg
Heat oven to 350 degrees. Slice potatoes to desired thickness; spread evenly in an 8-inch square dish. Combine orange juice, brown sugar, wheat germ, margarine, orange peel, cinnamon and nutmeg. Cover dish with foil or lid. Bake 1 hour, until potatoes are tender.

Yams vs Sweet Potatoes

Did you know that Yams in the U.S. are actually sweet potatoes? These orange-fleshed sweet potatoes were called yams to avoid confusion with the traditional sweet potato that has white flesh. For some reason there could not be an orange-fleshed and white fleshed sweet potato together on the same dinner table. One had to be called sweet potato, the other yam. The word yam comes from the African word nyami which means starchy edible root.

Recipepapa Stuffing
This stuffing is not actually stuffed into the bird but cooked separately. Getting salmonella is not good and besides the stuffing is usually done way in advance of the turkey. A lot of times the little kids and big kids are hitting the stuffing before the main meal is even served.
In our house we make a lot of stuffing but for some reason it is all gone by the next day.
We must be doing something right. I hope you like this recipe.
Recipepapa Stuffing
1 pack of Bacon
Turkey Giblet
4 bags of stuffing mix
2 packs of Shitake Mushrooms (soaked overnight in water)
3 stalks of celery
3 Tbsp. of diced parsely
4 blocks of butter (as needed)
1 can of water chessnuts
Dice turkey giblet and the bacon and fry on medium in a very large cooking pot. After it browns a bit add diced celery, diced water chessnuts, diced parsely and diced shitake mushrooms. Make sure you keep the Shitake Mushroom water because it will be used later.
Let the celery cook down a bit and when soft start adding the stuffing mix ½ bag at a time along with butter and the Shitake Mushroom water. Make sure you stir to prevent the bottom from sticking. Continue adding suffing mix, butter, and Shitake Mushroom Water and keep stirring the mixture. Play around with the combination to get the consistency you prefer.
Finally hide stuffing from big kids and little kids until the Turkey is ready to eat.
