This brownie recipe is perfect for those allergic to gluten because it is made entirely with rice flour. For this recipe you will need Mochiko Sweet Rice Flour and Brown Rice Flour. Most Asian markets have Mochiko flour and Brown Rice flour can easily be made using a food processor. If you eliminate the nuts from this recipe, it will be perfect for kids allergic to gluten and nuts. Finally for women suffering from PMS, Mochi Brownies are probably a better alternative than regular flour wheat brownies. Controlling gluten intake is a good way to regulate high estrogen levels in the body which causes those nasty PMS symptoms.

Ted’s Bakery Chocolate Haupia Pie

If you are planning on coming to Hawaii and taking a drive out to the North Shore to see the giant waves, you gotta stop by Ted’s Bakery located at 59-024 Kamehameha Highway, near Sunset Beach. They have an unreal Chocolate Haupia (coconut cream) Pie which is truly a Hawaiian Original. If you don’t have the money or time to do the above, this recipe is for you.

Tofu Pie

The key with this dessert is to make sure you properly drain the tofu. Undrained tofu is very watery and if you use undrained tofu your pie will be one big pile of mush and not very good.

Fuj’s Cake

Here is an awesome recipe for a very unreal looking and tasting chocolate cake. The family who gave us this recipe hails from Kapahulu where they take pride in their baked goods. Brown Sugar Nin Gau

Gau is a sticky sweet brown rice cake served during Chinese New Years. There are several types of gau but what is traditionally served during Chinese New Years is the Brown Sugar Nin Gau.

Gau is relatively inexpensive and therefore it is probably best to just buy it from Chinatown. However if you live in Hawaii and have watched KHON News or seen the videos on youtube, you will probably be leary of anything from this part of town. If you are curious just google up “ogo” khon news or go to youtube and search “chinatown rats” Hawaii.

Yes making your own Gau might take some effort but the reward this tasty treat has to offer and piece of mind knowing your gau is clean and safe is well worth it.

Easy Pumpkin Pie

The pumpkin shortage you read about in the news is not going to affect us this year but may be a problem next year. Nestle which owns Libby products was unable to pick pumpkins due to heavy rains. Pumpkins rot when they sit in the mud for prolonged periods of time and because of this, Libby has decided to stop canning any more pumpkins this year.

Cranberries belong to a group of evergreen dwarf shrub native to bogs. Bogs are wetlands typically found in cold areas of the northern hemisphere. The water originating from bogs are acidic and have a charateristic brown color from dissoved peat tannins and decaying vegetable matter.

All of this sounds pretty gross but the Native Americans who lived off the land were not going to let a little acidic bog water stop them. Today cranberries are commercially grown in sandy beds constructed in upland areas, which have shallow water tables. Contrary to popular belief, cranberry beds are only flooded during harvest and the winter months to prevent frost damage. So the what you see on TV in the Oceans Spray commercials are not everyday occurances in the life of a cranberry.

Orange-Glazed Sweet-Potatoes or Yams

Orange-Glazed Sweet-Potatoes

4 Servings
1 pound sweet potatoes
3/4 cup orange juice
1/2 cup firmly packed brown sugar
1/4 tablespoon wheat germ
1 tablespoon margarine
2 tablespoons grated orange peel
1 teaspoon cinnamon
1/4 teaspoon fresh grated nutmeg

Heat oven to 350 degrees. Slice potatoes to desired thickness; spread evenly in an 8-inch square dish. Combine orange juice, brown sugar, wheat germ, margarine, orange peel, cinnamon and nutmeg. Cover dish with foil or lid. Bake 1 hour, until potatoes are tender.
